Eid Mubarak Hamper

No doubt that Ramadan or fasting is ahead. So before it to late, I wanna say "Happy Fasting Day", hope all of you who are going to practice/start the fasting day, will doing well.


For this coming Eid Mubarak in July, I am making this hamper for my customers. This is a luggage box covered by green paper and consists of 4 small tins @250gr and full of different cookies. 


The price is not fixed or in the other word, we can make a package that suits to your budget. We can fill the jars with peanut, candies, chocolate, or dates as well.

Hidden wafer cookies

I was using hidden name for this cookies because I put wafer inside. So that, it was like hidden the wafer inside the cookies. 
There are two variants flavor for this cookies, chocolate cheese and cappucino with pink chocolate rice. Although the name and the look are very simple, don't think the taste as simple as the name before you try it. There is a complicate taste which is very tasteful with the combination of the crips from the wafer and the melted cookies outside. What a perfect combination.



I like the crumbs when I tried to cut it into two.

Melted Brown Cookies

Hi again guys, I appear again, not me,, humm.. my writing actually.. hahaha.. It's okay. Today I gonna share about my new cookies variation, "melted brown cookies". hmmm, from the name we know that this cookies will melt in your mouth, indeed. 

Although the shape was just a rectangular, but once you try it you will fall in love with this cookies.

Swan Cream Puff a.k.a Kue Sus

Meet me again guys through my writing... Hahaha.. Do you have a good day? I dooo. Today I'm gonna share you my daily baking activities again and it's all about cream puff again. I have already posted about cream puff in general shape, but for this cream puff I made it in a swan shape. 

I have already said in my previous writing about cookies cups that I made 3 different cakes for my customers. Here is the second cake. Cream puff or we said Kue Sus in Indonesian language that were filled by vanilla custard. 


I wasn't satified for the photo I took because I was in hurry to send the cake to my customer.. Huhuhu.. Sorry guys for a little bit ugly photos. Hahaha.. The most important think the taste right. Thank you for my customer who loves this choux pastry.

Unique Cookies Cup

Hi again guys, what a tired day huh?!! haha.. Alhough I was tired physically during this two day but I still love my job. I was preparing 3 different cakes for my customer who will stay at their new house. So, actually they have a little celebration and I made those cake for them. One of the cakes that I will share here is "cookies cup". So unique right, so stay tune!! Hahahah


What do you think? Is it beautiful? My tired was paid after seeing those cake.. Huaaa soo beautiful, not only the appearance was good, the taste will always the number one. I was happy too that all the people who came to the event and ate those cake said that it was so yummy. The cookies cup is crips and the filling was creamy and soft. What a unique sensation when you can eat cookies with creamy filling. 


This cake are insanely delightful. Hahaha.. I made 3 different flavor for the cookies cup skin. One was with chocochips, one was original, and another one was with choclate rice. (so sorry, I just took pic with the original one). 


I was in hurry when taking this picture. Because I baked the cake in the early morning on the day of the event, so this is soo fresh. So, I didn't have much time and in hurry to deliver the cake.

Coconut Jam (Selai Srikaya)

Hi again guys, greeting from this super hot summer weather in Surabaya. I am very happy because today I am gonna share my recipe.

I think you can guess from the tittle what is inside the bowl.. hahaha.. Yesss,, it is coconut jam. yummm.. This kind of jam is very popular in Southest Asia but local people from different countries have given different names. For example in Indonesia we call it Selai Srikaya, in Singapore and Malaysia it is known as Kaya, and in Thailand they call it Sangkhaya. Although it has different name, but the basic ingredients for making this jam is similar which consists of egg, coconut milk, pandan leaf, and sugar. 

Do you know where it comes from? and How it can spread in Southest Asia especially in Indonesia? 
This Srikaya has already been consumed by Southest Asia in hundred years ago. What an old dishes!!! Many people have believed that this jam is orginally from Hainan Island in China which was very rich for coconut tree. The migration of Hakka people is believed to be the people who spread this jam through Southest Asia and then become popular ever since. Most of them were profesions as chef and quite experience in kitchen. 

There is a link between the story and why I had an idea to make this Selai Srikaya. It is because I am also a Hakka descendent. Hahaha.. So, grew up in Hakka family has taught me a lot of kind of food that are influenced by Chinese culture. We usually have this coconut jam in my house and eat it together with white bread or toast bread. Huummm so yummy..
So, here is the recipe, very simple, so easy to make, and I guarantee that everyone can make it.
Ingredients: 
1 Large egg
110mL thick coconut milk
70 gr white sugar
1 pandan leaf (knot)
Method: 
1. Put into a bowl coconut milk, sugar, and pandan leaf.
2. Whisk the egg with fork.
3. Pour the egg into the coconut milk mixture. 
4. Cook it with double pan and stir frequently (once every ten minutes). Cook until thick (it takes approximately 30 minutes).
Very simple right, now you have your homemade coconut jam that ready to be served with bread. There is nothing better than homemade. What a delicious jam with insteresting story behind. Thank you, hope you enjoy it. ^^

Donut.. Donat... Doughnut..

ohhhh Donuts,,, Why you are so yummy??? Hahah
Really good snack for happy tummy.. Do you agree? Don't ask me for the calorie...T.T

Who don't know donut? Who doesn't love doughnut? Every country has different name to this snack that has a hole in the middle. This unique cake is very is to make, but take quite a long time to wait the fermation of the yeast that make the cake inflate well. We call it donat in Indonesia.


As I know, donut story has begun in mid-19th century. However, there are a lot of version how doughnut was created in some countries.Before the famous and common donut we know  that has hole in the middle, the first donut was like a ball and fried with pork fat which created by Dutch known as "olykoek" means oily cake. Elizabeth Gregory was known for making the olykoek and one day she made for her son, Hanson Gregory who was a sailor. 


The ones that she made for her son did't has a hole in the middle. It was accidently created by her son. On his voyages journey, he took one of the cake and put it on the ship's steering wheel to keep his hand free because he had to focus on the storm in 1847. This is how doughnut with hole in the middle has begun.. What an interesting story!!! 


The donut then becomes popular ever since with different topping and different flavor. Which one do you like. I made with 6 different flavor, one with powdered sugar (the classic one), blueberry jam, chocolate chips, chocolate rice, cheese, and peanut.


Don't ask me how was the taste? I was sooo yummy, so fluffy, dense but very soft. Not only me who was making the cakes tell you that is so delicious, but everyone who I asked for the feedback also tell me it is delicious.


How happy you are when people tell you that your cake is definitely yummy.

Opera Cake

Hiii.. Hii again guys... It seems a donkey's year that I didn't post my baking diaries..LoL, although it just a week. hahahaha

I was very busy last few day because we were (my mother's families side and I) celebrating our grandpa's birthday party. Do you know my grandpa is turning 84th.. WoW, it is very rarely receltly right to reach the age. We are very greatful that he still healthy, not to much illness or serious disease, and stay happy together with my grandma. What a wonderful life!!!

Then, for my grandpa birthday I planned to make opera cake a week before the day came. I chose the cake because it is a good combination between cake, coffee cream, and chocolate. I think it is a delicated cake and thank God everyboday said it was very delicious. I was happy that all my family liked it. 


I made two decoration for this opera cake... huhhh ugly decoration. It tells me that I must practice to decorate cake much more than before. I had already look for a lot of decoration idea, but I don't know when I tried to decorate the cake as I planned, it didn't turn well. For the letter I wrote in the Chinese letter which means Happy Birthday Grandpa. 


I love opera very much. The cake is very fluffy, very soft, the coffee buttercream also turns well, and the chocolate ganache just make everything perfect. This is insanely yummy cake.. Hahah.. One slice is necer enough, but the calorie really killed me.. Haha. But it's ok, it was weekend, I was cheating one day just for my grandpa b'day. huhuhuhu


I made 8 layers, 4 basic layer cakes, 2 layer of coffee buttercream, and 2 layers for ganache. 


For this second decoration, I made it even more simple with chocolate crush and I spread it on top. After that I put white chocolate bar that I had written Happy B'day (in chinese). Sorry, I just forgot to that the white chocolate bar. 

Ok, decoration maybe 3 of ten, but it's ok. The most important thing always the taste. Tasteful, delicated, yummy, delighted, and soft, fluffy, and chocolaty, indeed. 
I was happy the cake was tasteful, because I made it half day, from 11am to 5pm,, hoaammm. What a long journey. LoL.


This is my grandpa whose birthday was on last 8 June, 2014. Happy B'day Grandpa, we love you^^

Eclair

Hi again guys^^
Good day right... Surabaya is very hot, even when it rains, the weather is still hot. Today I just baked eclair and after taking the pictures, I am directly switch on my computer and start blogging. I just like sharing my daily baking diaries and experience. Next time, I will also share the recipe, so all of you guys can try what I have tried. 

Actually, eclair is similar with cream puff or we say it Kue Sus in Indonesia. The main difference is the eclair is longer that cream puff. 


I like how the cake came out from my oven, the height and the size as well. This time I made 4 different filling that are cheese, chocolate, green tea, and vanilla. For me as a chocolate lover, I prefer the chocolate one. hahah^^. I think I have a homework everytime I bake a cake or dessert, the plating matter. I am still terrible in plating, I need to discover more about plating, so I can provide the best picture. Hahaha.. Although the taste is always number one.


This time I made the skin a little bit crispy, so I baked it longer than the required time. I don't know which kind of skin do you like, the crispy or the soft one. 


Ooh, one more information that I know the difference between cream puff and eclair. Eclair will topped with icing or chocolate while cream puff won't.


Eclair in Indonesia and French is different. We usually fill the eclair with vanilla custard while French will fill the eclair with cream.

Kastengel (Cheese Stick Cookies)

Who are a cheese lover?? I will the first one to rise my hand. hihihi.. I love cheese especially cheddar cheese despite there are a lot of cheese types because it is suitable with my tongue. At this time, I was making castengels or pronounces as Kastengel in Indonesia. This cheese stick cookies are so tasteful and so cheesy. The combination of two types of cheese (cheddar and edam) will satisfied your tongue. 


Kastengel is commonly shaped in rectangular and will have grated cheese on top. Indonesian people usually have this kind of cookies during Idul Fitri or Eid Mubarak. However, recently people will have this snack more often although there is no special day to celebrate. 


I was making this cookies as a special request from my customer who is a cheese lover. You wouldn't stop till the end to eat this cookies (kindly like addiction.. hahaha) because it melts on your tongue. ^^


Kastengel comes from Dutch language with two words, Kaas and Stengels. I think there are a lot of cookies and cakes that have influence from Dutch since Dutch Colonial came to Indonesia. Kaas means cheese and stengels means bars. So that way the main ingredient is cheese and is shape like a bar. 



Do you know that Kastengel in Indonesia is slightly different with Kastengel in Dutch version. Kastengel there is longer than in Indonesia which is like a rules with 30cm lenght. What a long Kastengel!! hahaha
When the cookies came to Indonesia, it was automatically adapted with all ingredients included oven in Indonesia. Because we use to be have a smaller oven than in Netherland, then the Kastengel was cut shorter. 


It is very interesting to know the story behind every cakes, cookies, and recipes we have now.

Rice Dumpling a.k.a Bakcang

This is the second day of June and also the Dragon Boat Festival. Yeeyyy^^. As a chinese descendant, we always celebrate this oldest traditional chinese festival every year. We always make (actually my mom ..hahah, who is very expert making this dimsum) our own rice dumpling and eat on that day. 


Bakcang,, yeah this is how we pronouce the rice dumpling in Indonesia or known as Zong zi in Chinese. This festival is held to commemorate the patriotic poet, Qu Yuan who used to be a minister of the Kindmom of Chu. He suicided by drowning himself into the Milou River in 278 BCE at age of 61. He was a very loyal minister but being slandered and exiled by the King. 


The local people made the rice dumpling and thew into the river in order to protect the Qu Yuan's body from fish. They hope that fishes in the river would eat the rice dumpling they thrown, instead. Nowadays, bakcang is sold anywhere globally. The taste and the filling is influenced by the place where it is sold. In Indonesia, especially Surabaya (where I live, hoohooo) there are a lot of flavor from savory to the sweet ones. 

This rice dumpling is made from glutinous rice, chinese five spices, and salted egg yolk are the main ingredients that should be used. For the filling some people like adding peanut and some people don't It really depend on the people.

Vegetarian Burger

I guess most of you are a burger lover, right? me too. This common food in America is being popular here in Indonesia. But, some researches have shown that this kind of junk food or empty-food calorie is not healthy for our body. It is due to the meat (usually beef), the preservatives that adeed to the beef, and also the dressing inside the burger. But, last two days because I am currently practising to be a vegan, I made my own burger which was healthier and I didn't add any mayonaise into my burger.


For the buns I used the buns with white sesame on top. Inside the burger I used single cheese (or Kraft slice cheese) which you can find at supermarket, lettuces, slice tomatoes, slice cucumber, and also the vegetarian ham. This vegetarian ham is made from soy bean which is healthier and also gluten free. Most of vegetarian meats are made from flour that is not good for our body. 

Pssstt.. Sorry I just forgot to take pic when I cut it to showed you the filling. Hahaha... Then, to make it more tasty, I just added a spoonful of chilli sauce instead of mayonaise. If you lazy or can not make the vegetarian ham, just buy it at supermarket. Easy, right.. Hahaha
