Hi again guys, greeting from this super hot summer weather in Surabaya. I am very happy because today I am gonna share my recipe.
I think you can guess from the tittle what is inside the bowl.. hahaha.. Yesss,, it is coconut jam. yummm.. This kind of jam is very popular in Southest Asia but local people from different countries have given different names. For example in Indonesia we call it Selai Srikaya, in Singapore and Malaysia it is known as Kaya, and in Thailand they call it Sangkhaya. Although it has different name, but the basic ingredients for making this jam is similar which consists of egg, coconut milk, pandan leaf, and sugar.
Do you know where it comes from? and How it can spread in Southest Asia especially in Indonesia?
This Srikaya has already been consumed by Southest Asia in hundred years ago. What an old dishes!!! Many people have believed that this jam is orginally from Hainan Island in China which was very rich for coconut tree. The migration of Hakka people is believed to be the people who spread this jam through Southest Asia and then become popular ever since. Most of them were profesions as chef and quite experience in kitchen.
There is a link between the story and why I had an idea to make this Selai Srikaya. It is because I am also a Hakka descendent. Hahaha.. So, grew up in Hakka family has taught me a lot of kind of food that are influenced by Chinese culture. We usually have this coconut jam in my house and eat it together with white bread or toast bread. Huummm so yummy..
So, here is the recipe, very simple, so easy to make, and I guarantee that everyone can make it.
Ingredients:
1 Large egg
110mL thick coconut milk
70 gr white sugar
1 pandan leaf (knot)
Method:
1. Put into a bowl coconut milk, sugar, and pandan leaf.
2. Whisk the egg with fork.
3. Pour the egg into the coconut milk mixture.
4. Cook it with double pan and stir frequently (once every ten minutes). Cook until thick (it takes approximately 30 minutes).
Very simple right, now you have your homemade coconut jam that ready to be served with bread. There is nothing better than homemade. What a delicious jam with insteresting story behind. Thank you, hope you enjoy it. ^^
